What’s going to happen to Bill’s? The property is getting a $185 million dollar renovation. It will reopen in 2014, with a new name, and obviously a new look! Previously reported here.

Two new restaurants opening in Las Vegas in the same week, I would possibly expect Mr. Gordon Ramsay himself to be present to promote some of this!

On to the Ramsay Pub & Grill! Opening December 18th, it will offer dinner only until mid-January, when it will then open for lunch as well. Former Sous Chef @ Ramsay’s London West Hollywood, Jeremy Berlin, will be the Executive Chef of the Pub & Grill. There will be some strict standards at this pub!

The “Grill” part of the eatery will have dishes including New Zealand Red Snapper, lamb t-Bone, brick-pressed cornish chicken, Dry aged, 30-ounce bone-in beef rib eye, and many other offerings, while the “Pub” side will feature more drinks, such as 36 beers on tap! (damn.. goodluck to the servers when they are asked “What do you have on tap?”!)

December is a busy Ramsay-Vegas month! In case you’re wondering, Gordon Ramsay Steak @ Paris has a long wait-list, and its very hard to get in (difficult even to get a reservation at times!). These places are definitely going to be BUSY! Show up early, or try to get reservations so you aren’t disappointed if you’re looking for a Ramsay Vegas Experience!

BurGR Las Vegas, Gordon Ramsay’s newest Vegas offering (he’s really pushing Vegas lately isn’t he?), will be located near the Las Vegas Strip, next to the casino’s Extra Lounge. It will be opening December 22, 2012.

The Menu will obviously have Burgers, with a Gordon Ramsay flare to them. We can probably expect Chips (fries) in some kind of newspaper wrapped cone, as well as the classics such as milkshakes, and in Ramsay style, pork bello buns, sweet potato fries (some fancy chipotle mayo perhaps Mr Ramsay?).

Some specs on the cooking process – Open flame broiled burgers, cooked by hardwoods including 60% alder and 40% applewood (man that sounds delicious). The actual patties will be constructed using three beef cuts, short rib, brisket, and the ever fatty and delicious chuck. Devonshire butter will also be present in the patty construction to deliver extra deliciousness…. Fries will be of course hand-cut, and cooked three times (rather than the usual two by most fine steakhouses… Bit of background here: Normally you take the cut raw fries, and fry them in lower temperature oil for a few minutes until they get tender. Pull the fries out, crank the heat on the fryer, and the fries are ready for 1 last sizzle in the frying to get their golden crispy exterior). BurGR Gordon Ramsay will be using Kennebec potatoes for a lighter, less starch filled fry.

There will of course be a variety of available food, including chicken sliders, jalapeno poppers, and a twist on the Ramsay Classic, Sticky Toffee Pudding (which btw, is UNBELIEVABLE at Gordon Ramsay Steak). Beers (30+ on tap) and a full bar will of course be offered, including a BurGR draught especially created for the restaurant by Stone Brewing Co. in San Diego.

We’ll have a review as soon as it’s open! Can’t wait!

Drai Management Group, who currently run the ship for the after-hours club at the property, will be operating a Dayclub/Nightclub at the property once reopened. The club(s) are expected to be ready late 2014.

The steakhouse at Bill’s closed a while back, however there will be a new restaurant on the hotel’s second floor once the renovations are done. The guest rooms are also scheduled to be revamped.

This all is going on as The Linq, a $550 Million dollar development by Caesars Entertainment is going on. There is a LOT of updates coming to the centre strip, not to mention The Quad!

Nothing exciting to be honest.. The Linq will surely have a younger vibe, but we are still waiting to hear about what will make it truly unique, and what will entice Vegas visitors to visit the Linq… Other than the High Roller that is….

The property had major financial trouble and defaulted on the mortgage, which has roughly $310 million owing on it earlier in October.

What does this mean for LVH fans? Currently, not much. There are no changes expected in the very near future. The new owners have contracted the Navegante Group Las Vegas to run the properly.

Even all the employees (at least most of them) are expected to be re-hired under the new ownership.

The Hilton bailed out of the “LVH” nearly a year ago. Even with potential changes, the far north end of the strip has been falling apart, and there isn’t much up there to draw a crowd to the properties.
